How can I collect participants' emails without linking to the survey responses?

The most straightforward way to do this in LimeSurvey is to create a separate questionnaire for collecting participant contact details.
In the initial survey, set the "End URL" (under Settings -> Text elements) to be the URL of the participant contact details questionnaire. Also set LimeSurvey to "Automatically load end URL when survey complete" (under Settings -> Presentation).
In the participant contact details questionnaire, you can set the "Show welcome screen:" to "Off" (under Settings -> Presentation) if you want the respondent to jump straight to entering their email/etc.
